Officers noticed a vehicle travelling at 163km/h in a 100km/h zone on Byrnes Rd at Harefield on Saturday.
According to police, the officers stopped the vehicle and identified the driver, a 24-year-old man, had been drinking a long neck of beer while his speed was being checked.
The driver was issued a penalty notice for travelling at more than 45km/h over the speed limit and was charged with consuming alcohol whilst driving.
His licence was also seized, and he was suspended from driving for six months.
The incident was a part of Operation Drink Drive 1, which saw more than 34,000 random breath tests conducted between February 14 and February 16.
In other news:
The operation, which ran across the NSW Police Force's Southern Region, saw 42 people charged with drink driving, 25 seatbelt offences detected and 525 tickets issued for speeding.
Southern Region Commander, Assistant Commissioner Joe Cassar said while the majority of road users did the right thing, the message isn't sinking in with a select few.
"One positive test is one too many," Assistant Commissioner Cassar said.
"We will not hesitate to stop a vehicle if we think the driver's behaviour places everyone in the vehicle at risk of being in a crash.
"The focus on drink driving will not end because the operation has. Anyone who chooses to do the wrong thing on our roads and put others in danger will face the full brunt of the law."
